LA MESA D’ES VEDRÀ, BY PETUNIA

At the end of the table - or almost - the famous rock sets the scene. Impressive. In their element, the flavours of the Balearic Islands follow. Between local seasonal products, many of which come from the hotel's gardens, and delicately revisited local recipes, an elegant, authentic, and rooted cuisine emerges. Like the marinated eggplant with Mahón cheese and black Majorcan pork sobrasada or the squid rice flavoured with saffron and seaweed aioli. This is how to enjoy the region - all of its surprises and delights - without even moving.

The evening rooftop menu features natural oysters, tuna belly tartare with Iberian ham and caviar, and pieces of beef with plum vinegar... These raw ingredients, as fresh as can be, are refined with Japanese cutting techniques and beautiful Mediterranean produce, accompanied by tailor-made cocktails, DJ lounge music and sunsets over Es Vedrà to die for. Enchanting.

OUR CHEF

"To me, the way forward is clear: in the successful marriage of tradition and innovation, always based on the fine products of our islands."

Baltasar Rigo knows a thing or two about this... The son of Mallorcan restaurateurs, who has worked in the kitchens of Albert Adrià, among others, has learned a major lesson from his past experiences: “No avant-garde without heritage.
